Yam and Tomato Sauce


  • 1 yam

  • 8 fresh tomatoes (sliced)

  • 4 eggs

  • 1 onion (sliced)

  • 2 teaspoons vegetable oil

  • Exotic Choice Spice

  • Salt to taste

  • 1 fresh pepper (sliced)


  • Peel the yam, slice into pieces then wash and add in a pot of boiling water. Add a pinch of salt to the yam and allow to cook until soft. Bring down the yam from heat once cooked and then empty the water from the yam. Set this aside.

  • Slightly heat up the vegetable oil in a saucepan. Add a pinch of salt and stir in the onions to sauté. Allow the onions to sauté for at least 3 minutes before adding the sliced tomatoes. Stir the tomatoes and allow the sauce to fry until the tomatoes are slightly dried off of excess liquid.

  • Whisk the eggs and pour into the tomato sauce. Add Exotic Choice Spice and pepper. Stir the tomato and egg sauce until the egg is cooked then bring down the sauce from heat.

  • Serve the cooked yam together with the tomato sauce while hot for best taste.
